Why can't I just use one conversion for everything?

Volume and weight aren't the same thing. A cup of flour is light and airy at 120g, while a cup of honey is dense and sticky at 340g — nearly three times heavier for the same volume. Recipes written with weight measurements (common in professional and European baking) are more precise than volume measurements, which is why grams are the gold standard once you're doing serious baking.
